Manual fish fillet trimming system with multi-lane conveyor

A system designed to trim fillets of cod or similar fish by hand from a filleting machine to remove fins, bones, skin or other defects from the fillet.


The fish fillets trimming system is composed by the following items:

  • Fish fillet conveyor belt
    • It is divided lengthwise into three lanes.
    • The two side lanes transport untrimmed fish fillets.
    • The fillet that has already been retrimmed by the operators is transported in the central lane to the next stage of the process.
  • Fillet trimming stations
    • Polyethylene plate cutting tables with hole and ramp for unloading trimmings and waste.
    • Standard equipment has 3 stations located on each side of the conveyor. 6 stations in total.
    • The system can be designed with more stations if the process requires it.
  • Waste chutes
    • Chutes located on the lower level, with separation to channel differentiated cut-offs of pectoral fin (wings) and waste towards one end of the line.



  • Plastic modular belt conveyor of the Intralox brand (FDA and USDA approved).
  • Deflectors and lengthwise guides to divide the conveyor into three lanes:
    • two outer ones to channel the fillet from the filleting machine and a central one to channel the trimmed fillet.
  • Driven by an electric gear motor, to precisely adjust the speed of the conveyor and give more reliability and durability to the transmission.
  • Variable conveyor speed. Adjustable on the control panel
  • Engine fairing, built-in stainless steel AISI-316 quality.
  • Stainless steel shafts, with fretworked sprockets on them and mounted on polyamide bearings with ball bearings and seals.
  • Legs with wheels to facilitate the displacement of the equipment.
  • Built with sheet and profiles in stainless steel quality AISI-316.

Fillet trimming stations

  • The trimming stations are ergonomically designed to increase the efficiency of the operators’ work. They are located at the same level as the conveyor.
  • High-density polyethylene cutting table. Strong and cut resistant.
  • Slide to channel pectoral fin trimmings and waste to the chutes located on the lower level.

Waste chutes

  • Manufactured in stainless steel plate, with a U-shaped section.
  • With slope towards the discharge end
  • Water connection at the beginning of the chute.


  • Electric cabinet manufactured in fiberglass reinforced polyester resin.
  • Leading brand switchgear.
  • Emergency pushbutton
  • Frequency converter to adjust conveyor belt speed. 
  • 300 mA differential protection, Class B.
  • Safety control voltage at 24 volts.
