Flatfish: Flounder, halibut, dab, sole, and other morphologically similar species.

Other similar species: Black scabbardfish.

The JM-904 filleting machine has been designed for filleting different species of flatfish.



  • Applications:
    • Flounder, halibut, dab, sole, black scabbardfish, and other similar species.
  • Throughput rate: 40/50 fish/min, depending on the fish and the skill of the operator.
  • Working range: Up to 600 mm of total length (approx.) and up to 250 mm of total width.
          • (black scabbardfish: Up to 1000 mm of total length, head included).
  • Max. fish thickness:  50 mm.
  • Fish feeding system: From the top of the machine.
  • Product to be processed: Fish previously beheaded (with or without guts).
  • Manufacture: AISI-316 stainless steel, corrosion resistan materials and food-grade plastics.
  • Design: Compact and robust. Minimum foot-print.
  • Safety: Provided with an emergency stop device. CE marking.
  • Operators: 1 person.


Complementary equipment:

  • Elevated working platform.
  • Fish buffer tank for feeding the machine easily.
  • Separated modular conveyor belts for fillets and bones exit.


  • The fish must be previously beheaded. It can be with or without guts.

  • The machine must be mechanically adjusted according to the species and size of the fish to be processed. 

  • The headless fish is manually introduced into the machine from the top. It must be introduced vertically with the tail downwards and the ventral cavity towards the left of the machine.

  • The guides at the entrance of the machine allow centering the fish between the cutting knives.

  • Then, two conveyor belts hold it and introduce it inside the cutting area, separating the bone from the fillets.

  • The fillets and the bones (with or without guts), are carried outside the machine through two separated conveyor belts (optional), avoiding any possible contamination.
